Chicken nuggets

These chicken nuggets are a big favourite at our place. Poppy and I pick the herbs from the garden that we feel like using, gather lemons for their zest and juice and crumble day old bread between our fingers. Usually made on a Friday night when we have our "home made takeaway" night, where we make treat foods such as pizza, burgers, fish and chips, wraps or these yummy nuggets. Enjoy!

Your will need:
3 large chicken breasts, cut into strips 
4 pieces of day old bread, multi-grain works best,
zest of one lemon
1 Tbs shredded parmesan cheese
1/2 cup of your choice of herbs,we use chives, parsley, rosemary, thyme...
2 eggs

What to do:
Pre-heat oven to 180 degrees Celcius. 

Crack eggs into a bowl and lightly whisk.

In a kitchen wizz add bread, herbs, parmesan and lemon zest, wizz until the bread is finely crumbed, tip into bowl.

One by one place your chicken pieces in the egg to coat chicken, then into the bread crumb mixture, lay pieces evenly onto a lined baking tray and bake for 20mins or until cooked through.

We serve ours with a dip made from mayonnaise and lemon juice.
