Apple cake

I recently had a birthday and made this amazing apple cake to celebrate! Our tree is loaded with apples so I was happy to use them up. Enjoy!

What you'll need:
125g butter, chopped
1/2 firmly packed brown sugar
1 tsp vanilla
2 eggs
1 cup self raising flour
1/2 cup plain flour
3/4 cup milk
2 small apples 
1/4 cup apricot jam
Double cream to serve (hey, it was my birthday cake, don't judge.)

What to do:
Pre-heat oven to 180 degrees Celsius and grease and line your cake tin. 

In a bowl cream butter, sugar and vanilla with beaters for about 5 minutes, then beat in one egg at a time.

Sift flours over mixture, add milk and fold until just combined. Spoon into prepared cake tin.

Core apples and slice thinly, arrange on top of the cake mix pressing into the batter lightly.

Bake for 35-40 minutes or until cooked through.

Heat apricot jam in microwave for 1 minute or until runny, pour over cake and serve.
