Apple Crumble Slice

This slice is perfect for lunch boxes, I wrap up portions, freeze and alternate between other slices and muffins so lunch boxes don't get monotonous. 

What you'll need:
180g Butter, softened
3/4 cup caster sugar
2 eggs
1 1/2 cups plain flour
1 tsp baking powder
1 tsp ground cinnamon
1 large apple (I used Granny smith), peeled, cored and diced

1/4 cup brown sugar
1/4 cup plain flour
1 tsp ground cinnamon
30g butter, softened

What to do:
Pre-heat oven to 180 degrees. 

Cream butter and sugar with beaters until pale and creamy, add eggs mix well.

Sift flour. baking powder and cinnamon over butter mixture, fold through and spread into a lined slice tin. Top with apple.


Combine brown sugar, flour, cinnamon and butter in a bowl, rub butter in until mixture is crumbly.

Crumble over top of apples.

Bake for 50 minutes or until golden and a skewer inserted in the centre comes out clean.

Eat a slice hot, because it's so good and you are the one that did all the hard work!
