Polenta Chips

Polenta chips are a fun afternoon snack that is easy to make and can be cut to suit the size of the devourers fingers, I make smaller shapes for Rory and Alexis, bigger shapes for Poppy and big chips for Tommy. Serve with some aioli or BBQ sauce and you have got yourself a tasty little treat!

What you'll need: 

1L Chicken or Veggie stock
250g Instant Polenta
100g Parmesan
Salt and Pepper
Oil for Frying

What to do:

Bring stock to the boil, whisk in polenta, parmesan, salt and pepper, stirring for approx 3 minutes.

Place polenta onto a lined tray and spread to about 1.5cm thickness. Leaving the top nice and smooth.

Place in fridge to cool.

Cut into shapes with cookie cutters or into 'fingers' like chips and fry in a little oil, leaving to drain on paper towel.

*If you quarter this recipe it's the perfect amount for an afternoon snack (1 cup stock, 60g polenta, decent sprinkle of parmesan).
