Bacon, Zucchini and Lemon Pasta.

We love this easy pasta recipe around here, everyone's bowls are always returned empty and it uses up some of the many zucchinis we have this time of year.

What you'll need:

375g dried spaghetti pasta
1/4 cup olive oil
250g short cut bacon, thinly sliced
3 garlic cloves crushed
2 large zucchini, grated
2 tsp lemon rind, finely grated
Parmesan to serve

What to do:

Cook pasta in a large pot of salted boiling water until tender.

Drain pasta, saving 1/2 cup of the water, return the pasta to the pot and cover to keep warm.

In a large frying pan heat 1 tablespoon of olive oil, add bacon, cook for about 3 minutes or until browned. Add garlic and zucchini stirring for 1 minute. 

Add bacon mixture to pasta along with lemon rind, reserved water and remaining olive oil.

Toss to combine, serve with parmesan.

(After serving up the children's I add a whole lot of pepper to Tommy's and mine, sometimes a chopped up chilli also.)



  1. You inspired me Holli and I gave it a crack HOWEVER I substituted the lemon rind for ripe cherry tomatoes and a bit of basil. Oh so delish!!!
