I love this basic muffin recipe that lets me add what ever extras I have in the kitchen.

This time I added blueberries and apricots, we also love, raspberry and white chocolate bits, banana, dates, and soon I will be adding blackberries and freezing them for work and school lunch boxes.

What you'll need:

2 cups self-raising flour
1/2 cups sugar
1 egg beaten
1/4 cups oil

  • 1 cup milk
What to do:
Place all ingredients in bowl.
Mix until combined.
Bake on 180 for approximately 20 minutes.

(I add about 1/2 a cup of whatever fruit I want to add)
