I was a bit skeptical at the sound of Broccoli soup, but was very happy with the finished product. A creamy, delicious, healthy dinner, that the whole family enjoyed.
What you'll need:
1 kg broccoli
1 onion, diced
2 cloves of garlic, crushed
2 tps olive oil
5 cups vegetable stock
What to do:
Heat oil in large saucepan over medium heat.
Add onion and broccoli, and cook, stirring occasionally, for 2-3 minutes or until soft.
Add garlic and cook, stirring, for 30 seconds or until fragrant.
Add stock to pot.
Increase heat to high and bring to the boil.
Reduce heat to medium, cover and cook for 20 minutes or until tender.
Use a stick blender to blend until smooth.
Serve with hot croutons for a yummy crunch.
